Ingredients
  • 1 pound queso blanco or queso de frier
  • 2 tablespoons butter, room temperature
  • 2 cups all-purpose flour
  • 1 egg
  • ½ teaspoon salt
  • 1 tablespoon granulated sugar
  • 4-5 tablespoons cold water
  • Corn oil, for frying
Instructions
  1. Cut cheese into strips about ¾ inch wide and 2 ¾ inches long.
  2. On a flat surface, form flour into a circle with a hole in the center.
  3. Add egg and butter to the center. Mix salt, sugar and cold water in a bowl, then gradually incorporate into the flour.
  4. Knead until a smooth dough forms, shape into a ball, wrap in plastic and let rest for 30 minutes at room temperature.
  5. Lightly flour a clean surface and roll the dough into a square about ⅛ inch thick.
  6. Cut the dough into long, uniform strips. Wrap each piece of cheese completely in a strip, sealing edges to prevent leaks.
  7. Heat 1 inch of oil in a frying pan over medium-high heat, then lower to medium. Fry tequeños until golden brown and crispy.
  8. Alternatively, air fry at 400°F for 7-8 minutes. Drain on paper towels.
  9. Serve warm with guasacaca sauce, a tangy Venezuelan avocado dip.
