Ingredients
- 1 tablespoon butter, melted
- 2 cups grated cheese (mozzarella or fresh cheese that melts)
- 2 ripe plantains, peeled
- 3 ounces guava paste (bocadillo), sliced into thin strips (approximately 85 grams)
Instructions
- Preheat oven to 390°F.
- Make a lengthwise slit along each plantain, being careful not to cut all the way through.
- Gently open the slits and brush the inside of each plantain with melted butter.
- Fill the slits with slices of guava paste (bocadillo).
- Place the plantains flat on a lined baking sheet.
- Bake for 35 minutes, or until tender and golden brown.
- Remove from the oven and sprinkle grated cheese over the top.
- Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
- Serve warm with roasted chicken and sliced vegetables.
