Ingredients
  • 1 tablespoon butter, melted
  • 2 cups grated cheese (mozzarella or fresh cheese that melts)
  • 2 ripe plantains, peeled
  • 3 ounces guava paste (bocadillo), sliced into thin strips (approximately 85 grams)
Instructions
  1. Preheat oven to 390°F.
  2. Make a lengthwise slit along each plantain, being careful not to cut all the way through.
  3. Gently open the slits and brush the inside of each plantain with melted butter.
  4. Fill the slits with slices of guava paste (bocadillo).
  5. Place the plantains flat on a lined baking sheet.
  6. Bake for 35 minutes, or until tender and golden brown.
  7. Remove from the oven and sprinkle grated cheese over the top.
  8. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  9. Serve warm with roasted chicken and sliced vegetables.
